SPINACH WRAPS FLAVOR PROFILE- strong spinach flavor (main ingredient) balanced by savory onion and sweet apples.
Pairs well with savory flavors, meats, BBQ, poultry, sausage, smoked salmon, seafood, cheese, nuts. Goes well with soy sauce and unami flavors. Spicy food/tabasco sauce.
KALE WRAPS FLAVOR PROFILE- Medium to light kale taste. Major flavor akin to sour cream and onion taste from onion & celery. Slight sweetness from apples. Pairs well with savory and sweet flavors. Spicy food/Tabasco sauce, chorizo.
MEATS- Smoked anything, bacon, grilled chicken, anchovies, eggs, fish, sausage, hamburger, Beyond Meat burgers, shrimp, tuna, salmon, shredded jackfruit or BBQ, veggies burgers go awesomely.
BEANS- black beans, red beans, lentils, chickpeas, hummus is a favorite. Bean based veggie burgers, like a black bean burger yum!
VEGGIES- shitake mushrooms, shallots, mushrooms, tomato, potato, peppers, squash, sweet onions, collard greens, sweet potato, stir fry, avocado, asparagus, artichokes, carrots, eggplant, sprouts.
You can't go wrong with any veggie but these are some that taste great in the spinach wraps.
CHEESE- feta, aged cheeses, parmesan, goat, ricotta, cream cheese, sour cream, blue cheese, yogurt, cheddar, swiss, gorgonzola, emmental, cottage.
CREAM/MILK- based dressings like ranch or thousand island. Nut based dressings are equally as tasty.
HERBS/SPICES- dill, garlic, ginger, cumin, curry, chives, cayenne, fennel, salt, red pepper flakes, lemon juice, lovage, marjoram, int, mustard, Dijon mustard, nutmeg, sweet paprika, fresh thyme, parsley, balsamic vinegar, cider or red vinegar, olive oil, butter and Ghee.
FRUITS & NUTS cranberry, raisins, orange, mango, strawberries, nut butters, almonds, cashews, hazelnuts, pecans, pine nuts, pistachios, walnuts, sesame seed, sunflower seeds.
MEATS- Chorizo, roasted & grilled meats/chicken/fish. Shredded pork, buffalo chicken, catfish, fried shrimp.
BEANS- white beans, red beans, adzuki, cranberry, green, kidney, mung. lentils

SIMPLE INGREDIENTS
Kale. What's not to love? It's the king of veggies for it's many health benefits including helping us to detoxify. We balance the bitterness of kale with apples, onions and celery for a smooth clean taste.
We like to get our vitamins and minerals the natural way. Spinach has potassium, manganese, zinc, magnesium, iron, and calcium. It is a source of vitamins like folate, niacin, vitamin A, vitamin B6, vitamin C, vitamin K. . You can see why we love this plant powered superstar.
It's not just for peanut butter. Celery is the underdog of veggies but it has some amazing health benefits. A component called butylphthalide reduces bad cholesterol. Plus it's got lots of magnesium to help you keep calm and carry on.
Sweet, crisp, satisfying. There's nothing like a fresh ripe apple. We use the natural sweetness of apples to balance the strong earthy taste of spinach and kale. With a glycemic index of 38 it won't spike blood glucose like table sugar.
Onion gives the wraps a savory taste. But that's not all it's good for. Onions are loaded with Vitamin C, important for good skin and hair. Did you know that onions have more polyphenols than tomatoes? Polyphenols help prevent cellular damage from pollutants, smoking and free radicals.
We use a sprinkle of quinoa to liven up and add a little texture to the wraps. We've left it out in our paleo tacos. Psyllium is a natural soluble fiber that is slowly digested. That's a good thing for your gut and your gut microbes. It's also a good thing for your waist line as it keeps you fuller longer.
